Berry and Chia Jam

Capture the pure, vibrant taste of fresh berries with this incredibly simple, 3-ingredient (plus water!) chia jam. Forget refined sugars and complicated canning; this recipe comes together in minutes and uses the natural gelling power of chia seeds to create the perfect spreadable texture. It’s a healthy, sugar-free, and gluten-free way to brighten up your breakfast, naturally sweetened by the fruit itself.

Ingredients

  • 450 gr organic berries
  • 1 ½ cups water
  • 2 Tbsp chia seeds
  • A squeeze of lemon juice
  • 1 Tbsp rice malt syrup – optional

Method

  1. Simmer berries and water for 10 minutes
  2. Let cool and roughly puree
  3. Add lemon juice to taste and then add chia seeds
  4. Add rice malt syrup only if you want it sweeter (use very ripe berries and you won’t need the extra sweetener

Note : This recipe for jam has no sugar, therefore, it cannot be preserved. Only make small quantities at a time – easily lasts 7 days in fridge.
